-1 large sweet potato, peeled and sliced into 1/4-inch wide strips
-2 Tbsp. Extra Virgin Olive Oil
-2 tsp. Garlic powder
-1 tsp. Paprika
-2 Tbsp. Parmesan Cheese
-Preheat oven to 450 degrees.
-In a large bowl, toss sweet potatoes with EVOO until lightly coated.
-Add all remaining ingredients and toss to coat.
-Spread potatoes, in a single layer on a large baking sheet.
-Bake for 8-10 minutes, then flip potatoes, cooking 5-10 more minutes.
-Let fries cool for 5 minutes before serving!
